PALUSAMI MAKING
Palusami is a traditional dish, popular in Fiji, Samoa, and Tonga. It consists of taro leaves filled with coconut cream and other seasonings, and baked until tender. At Vavavi, you'll get to select your choice of ingredients, seasonings and protein to bake with your freshly plucked taro leaves.

At Vavavi, you'll be guided by our knowledgeable family, and learn traditional preparation methods while prioritising safety. You'll get to embrace the essence of village life, forging connections, and gaining a profound appreciation for Fiji's culture and natural root crops.

COCONUT SCRAPING & MILK EXTRACTION
Vavavi guests will master the art of coconut processing, skillfully scraping coconuts and extracting their luscious cream using the traditional and sustainable method involving natural vau bark.

WRAPPING CULINARY DELIGHTS
Wrapping food with natural leaves, like palm fronds and banana leaves, serves as a time-honoured culinary technique, deeply rooted in tradition. Guests at Vavavi will experience this practice to create a natural seal, trapping moisture and infusing the food with aromatic flavours during cooking.
